Split Pea Soup Recipe


 Split Pea Soup is a hearty and nutritious dish made with tender split peas, vegetables, and optional ham for added flavor. Perfect for a cozy meal, this soup is simple to make, filling, and full of comfort on a chilly day.

Ingredients:


1 cup dried split peas (green or yellow)


1 tablespoon olive oil or butter


1 medium onion, chopped


2 cloves garlic, minced


2 medium carrots, chopped


2 celery stalks, chopped


6 cups vegetable or chicken broth


1 bay leaf


1 teaspoon dried thyme


Salt and pepper to taste


1/2 teaspoon smoked paprika (optional for extra flavor)


1-2 cups ham (optional for added protein)


1 tablespoon lemon juice (optional for a touch of freshness)



Instructions:


1. Rinse the peas – Place the split peas in a colander and rinse them under cold water. Remove any debris or damaged peas.



2. Prepare the vegetables – In a large pot, heat the olive oil or butter over medium heat. Add the chopped onion, garlic, carrots, and celery. Cook for about 5 minutes until the vegetables are softened.



3. Add the peas and broth – Stir in the split peas, broth, bay leaf, thyme, smoked paprika (if using), and salt and pepper to taste. Bring the mixture to a boil.



4. Simmer the soup – Reduce the heat to low, cover the pot, and simmer for 1-1.5 hours, stirring occasionally, until the peas are tender and the soup has thickened.



5. Blend (optional) – For a smoother texture, use an immersion blender or regular blender to puree part of the soup. Blend to your desired consistency.



6. Add ham and season – If adding ham, stir it into the soup during the last 10 minutes of cooking. Adjust seasoning with salt, pepper, and a splash of lemon juice for freshness, if desired.



7. Serve – Serve hot, optionally with crusty bread for dipping.
