Figgy Duff is a traditional Newfoundland steamed pudding, rich with raisins and warm spices. This classic dessert is soft, moist, and often served with molasses or butter, making it a comforting treat for any occasion!
Ingredients:
2 cups all-purpose flour
1/2 cup brown sugar
1 tablespoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 cup raisins (or figs for variation)
1/2 cup butter, melted
3/4 cup milk or water
1 teaspoon vanilla extract (optional)
Instructions:
1. Prepare the mixture – In a large bowl, mix flour, brown sugar, baking powder, cinnamon, salt, and raisins.
2. Add wet ingredients – Stir in melted butter, milk (or water), and vanilla until a thick batter forms.
3. Prepare for steaming – Spoon the mixture into a greased pudding mold or wrap it in cheesecloth and tie it securely.
4. Steam the pudding – Place the mold or wrapped dough in a large pot with a few inches of boiling water. Cover and steam for about 1.5 to 2 hours, checking occasionally to ensure there’s enough water in the pot.
5. Serve – Carefully remove from the pot, let it cool slightly, then slice and serve with molasses, butter, or a rich caramel sauce.
Enjoy this classic Newfoundland treat, often served with a traditional Jigg’s Dinner!
