Potato Soup with Cheese

 Ingredients:


4 medium potatoes, peeled and diced


1 small onion, finely chopped


2 cloves garlic, minced


3 cups vegetable or chicken broth


1 cup milk or heavy cream


1 cup shredded cheddar cheese (or any preferred cheese)


2 tbsp butter


1/2 tsp salt


1/2 tsp black pepper


1/2 tsp paprika (optional)


1/4 cup chopped green onions or parsley (for garnish)


4 strips of cooked crispy bacon, crumbled (optional)



Instructions:


1. Sauté the onions and garlic:


In a large pot, melt the butter over medium heat.


Add the chopped onion and sauté until soft and translucent.


Stir in the garlic and cook for another 30 seconds.




2. Cook the potatoes:


Add the diced potatoes and broth to the pot.


Bring to a boil, then reduce the heat and let it simmer for about 15-20 minutes, or until the potatoes are tender.




3. Blend the soup (optional):


For a creamy texture, use an immersion blender to blend the soup until smooth.


If you prefer a chunkier soup, mash some of the potatoes with a fork and leave some pieces whole.




4. Add milk and cheese:


Stir in the milk (or heavy cream) and shredded cheese until melted and well combined.


Season with salt, black pepper, and paprika.




5. Serve:


Ladle the soup into bowls and garnish with chopped green onions, crispy bacon, and extra cheese if desired.


Serve hot with bread or croutons.
