Ingredients:
2 cups fresh basil leaves
1/2 cup mixed berries (strawberries, raspberries, or blueberries)
1/3 cup grated parmesan cheese
1/3 cup pine nuts or walnuts
2 cloves garlic, minced
1/2 cup extra virgin olive oil

1/4 tsp black pepper
1 tsp honey or balsamic vinegar (optional, to balance the tartness of the berries)
Instructions:
1. Prepare the ingredients:
Wash the basil leaves and berries.
Toast the pine nuts or walnuts in a dry pan for 1-2 minutes until golden brown (optional, but enhances the flavor).
2. Blend the pesto:
In a food processor, add the basil, berries, parmesan cheese, nuts, garlic, salt, and black pepper.
Blend until the mixture starts to combine.
3. Add the olive oil:
While blending, slowly drizzle in the olive oil until the pesto reaches a smooth consistency.
Taste and adjust seasoning, adding honey or balsamic vinegar if needed.
4. Serve:
Use the pesto with pasta, as a spread for sandwiches, or as a dressing for salads.
Store in an airtight container in the fridge for up to 5 days.
