Ingredients:
2 large potatoes, boiled and mashed
1/2 cup grated cheese
1 egg yolk
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon nutmeg (optional)
1/2 cup all-purpose flour
1 egg, beaten
1 cup breadcrumbs
Oil for frying
Instructions:
1. In a bowl, mix the mashed potatoes with cheese, egg yolk, salt, pepper, and nutmeg. Stir well until combined.
2. Shape the mixture into small cylinders or balls.
3. Coat each croquette in flour, dip it in the beaten egg, and then coat it with breadcrumbs.
4. Heat oil in a pan over medium heat. Fry the croquettes until golden brown and crispy.
5. Remove from the oil and drain on paper towels.
6. Serve hot with your favorite dip.
