Ingredients:
4 cups all-purpose flour
1/2 cup sugar
1 packet (2 1/4 tsp) active dry yeast
1/2 cup warm milk
4 eggs
1/2 cup unsalted butter, softened
1 tsp vanilla extract
1 tsp lemon zest
1/2 tsp salt
1 cup raisins (soaked in warm water or rum)
1/2 cup candied orange peel
1/2 cup chopped nuts (optional)
Instructions:
1. Activate the yeast:
In a small bowl, dissolve yeast in warm milk with 1 tablespoon of sugar. Let it sit for 5–10 minutes until foamy.
2. Prepare the dough:
In a large mixing bowl, combine flour, remaining sugar, and salt.
Add eggs, softened butter, vanilla extract, and lemon zest. Mix well.
Pour in the activated yeast mixture and knead until a soft dough forms (about 10 minutes).
3. First rise:
Cover the dough and let it rise in a warm place for about 2 hours or until it doubles in size.
4. Add the fruit:
Gently knead in the soaked raisins, candied orange peel, and nuts.
5. Shape and second rise:
Place the dough into a buttered panettone mold or a tall round baking pan.
Cover and let it rise again for another hour.
6. Bake:
Preheat the oven to 350°F (175°C).
Bake for 35–40 minutes, until golden brown on top.
7. Cool and serve:
Let it cool before slicing. Enjoy with coffee or tea!
