Montreal Smoked Meat Recipe

 Ingredients:


1 whole beef brisket (about 4-5 lbs)


2 tablespoons black peppercorns, crushed


1 tablespoon coriander seeds, crushed


1 tablespoon paprika


1 teaspoon garlic powder


1 teaspoon onion powder


1 teaspoon mustard seeds


1 teaspoon ground thyme


1/4 cup kosher salt


2 tablespoons brown sugar


1/4 cup water


1 tablespoon liquid smoke (optional)


Rye bread (for serving)


Mustard (for serving)



Instructions:


1. Prepare the rub: In a bowl, combine crushed peppercorns, coriander seeds, paprika, garlic powder, onion powder, mustard seeds, thyme, salt, and brown sugar.



2. Rub the brisket: Coat the brisket evenly with the spice mixture, pressing it into the meat. Wrap the brisket in plastic wrap and refrigerate for at least 12 hours (or overnight).



3. Preheat the smoker or oven: If using a smoker, preheat to 225°F (107°C). If using an oven, preheat to 250°F (121°C).



4. Cook the brisket: Place the brisket on the smoker or in the oven, fat side up. Smoke or roast for about 4-5 hours, or until the internal temperature reaches 190°F (88°C) for tender meat.



5. Rest the meat: Once cooked, let the brisket rest for 15-20 minutes before slicing thinly against the grain.



6. Serve: Serve on rye bread with mustard.
