Montreal-style bagels are smaller, denser, and slightly sweeter than traditional bagels, with a distinct chewy texture. Boiled in honey-sweetened water before baking, they have a unique flavor and a golden, crisp crust.
Ingredients:
4 cups (500g) all-purpose flour
1 packet (2 1/4 tsp) active dry yeast
3 tablespoons sugar
1 teaspoon salt
3/4 cup (180ml) warm water
1 egg
2 tablespoons vegetable oil
1 tablespoon honey (for dough)
8 cups (2L) water (for boiling)
1/4 cup honey (for boiling)
Sesame seeds or poppy seeds (for topping)
Instructions:
1. Prepare the dough: In a bowl, mix warm water, sugar, and yeast. Let it sit for 5 minutes until foamy. Add flour, salt, egg, oil, and honey, then knead until smooth. Let it rise for 1 hour.
2. Shape the bagels: Divide the dough into 8 pieces, roll into ropes, and form circles, sealing the ends.
3. Boil the bagels: Bring water and honey to a boil. Drop bagels in for 30 seconds per side, then drain.
4. Bake: Preheat the oven to 375°F (190°C). Sprinkle seeds on bagels and bake for 20-25 minutes until golden brown.
5. Cool and serve: Let the bagels cool slightly before enjoying.
Enjoy your Montreal-Style Bagels!
