Ingredients:
1 cup (225g) unsalted butter, softened
1 cup (200g) granulated sugar
2 tablespoons lemon zest (from about 2 lemons)
2 tablespoons fresh lemon juice
2 cups (250g) all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
Optional: powdered sugar for dusting
Instructions:
1. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
2. In a large bowl, cream together the butter and sugar until light and fluffy.
3. Add the lemon zest and lemon juice. Mix until well combined.
4. In another bowl, whisk together the flour, baking powder, and salt.
5. Gradually add the dry ingredients to the wet mixture. Mix until a soft dough forms.
6. Roll the dough into small balls (about 1 tablespoon each) and place them on the baking tray. Flatten slightly with your hand or a fork.
7. Bake for 10–12 minutes, or until the edges are lightly golden.
8. Let them cool on the tray for a few minutes, then transfer to a wire rack.
9. Once cooled, you can dust them with powdered sugar if desired.
