Ingredients:
2 cups (250g) finely grated carrots
1 1/2 cups (150g) almond flour (or finely ground almonds)
3/4 cup (150g) granulated sugar
3 large eggs
Zest of 1 orange
1/4 cup (60ml) vegetable oil (or melted butter)
1 tsp baking powder
1/2 tsp cinnamon (optional)
Pinch of salt
Powdered sugar for dusting (optional)
Instructions:
1. Preheat your oven to 350°F (175°C). Grease and line a round cake pan (8-inch or 20cm).
2. In a large bowl, beat the eggs and sugar until light and fluffy.
3. Add the oil (or melted butter) and orange zest. Mix well.
4. Stir in the grated carrots.
5. In a separate bowl, combine almond flour, baking powder, cinnamon, and salt.
6. Gradually fold the dry ingredients into the wet mixture until combined.
7. Pour the batter into the prepared cake pan.
8. Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
9. Let it cool, then dust with powdered sugar if desired.
