Ingredients:
For the Crust:
2 cups chocolate cookie crumbs
½ cup melted butter
For the Filling:
1 cup unsalted butter
1 ½ cups granulated sugar
3 oz unsweetened chocolate, melted
3 large eggs
1 teaspoon vanilla extract
For the Topping:
1 cup heavy cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
Chocolate shavings (optional)
Instructions:
1. Prepare the Crust:
Preheat the oven to 350°F (175°C).
Mix the chocolate cookie crumbs with melted butter until well combined.
Press the mixture into the bottom of a pie dish.
Bake for 10 minutes, then let it cool.
2. Make the Filling:
In a saucepan over low heat, melt the butter. Stir in the sugar and melted chocolate.
Remove from heat and whisk in the eggs one at a time, mixing well.
Add vanilla extract and mix until smooth.
Pour the filling over the cooled crust.
3. Bake the Pie:
Bake for 30-35 minutes or until the center is set.
Let the pie cool completely.
4. Prepare the Topping:
Whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
Spread over the cooled pie and top with chocolate shavings if desired.
5. Chill & Serve:
Refrigerate the pie for at least 2 hours before serving.
