Catalan Canelons (Canelons Catalans)
Ingredients:
12 caneloni pasta tubes
300g minced beef
200g minced pork
1 small onion (finely chopped)
2 cloves garlic (minced)
1 ripe tomato (grated)
50ml white wine
1 tablespoon olive oil
Salt and black pepper (to taste)
½ teaspoon nutmeg
50g grated cheese (Parmesan or Manchego)
For the Béchamel Sauce:
500ml milk
50g butter
50g flour
Salt and black pepper
½ teaspoon nutmeg
Instructions:
1. Prepare the filling:
Heat olive oil in a pan over medium heat.
Add chopped onion and garlic, and sauté until soft.
Add the minced beef and pork, cooking until browned.
Stir in the grated tomato and white wine. Let it simmer for 10 minutes until the liquid reduces.
Season with salt, black pepper, and nutmeg. Remove from heat and let it cool.
2. Cook the caneloni pasta:
Boil the pasta tubes according to the package instructions.
Drain and let them cool on a clean kitchen towel.
3. Prepare the béchamel sauce:
In a saucepan, melt the butter over low heat.
Add the flour and whisk continuously for 1-2 minutes.
Gradually pour in the milk while whisking to prevent lumps.
Cook until the sauce thickens, then season with salt, black pepper, and nutmeg.
4. Assemble the canelons:
Preheat the oven to 180°C (350°F).
Fill each pasta tube with the meat mixture.
Place the filled caneloni in a greased baking dish.
Pour the béchamel sauce over the top and sprinkle with grated cheese.
5. Bake:
Bake for 20-25 minutes until the top is golden and bubbly.
6. Serve:
Let it rest for a few minutes before serving. Enjoy your traditional Canelons Catalans!
