2 cups sushi rice
2 1/2 cups water
1/4 cup rice vinegar
1 tablespoon sugar
1 teaspoon salt
For the Roll:
5 sheets nori (seaweed)
1 cucumber, julienned
1 avocado, sliced
1/2 cup imitation crab meat (or real crab), shredded
2 tablespoons mayonnaise
1 tablespoon sesame seeds
1 tablespoon masago (optional, for topping)
For Serving:
Soy sauce
Pickled ginger
Wasabi

Instructions:
1. Prepare the Sushi Rice:
Rinse the sushi rice under cold water until the water runs clear.
Cook the rice with water in a rice cooker or on the stovetop.
In a small bowl, mix rice vinegar, sugar, and salt, then gently stir into the cooked rice. Let it cool.
2. Prepare the Fillings:
In a bowl, mix the shredded crab with mayonnaise.
Slice the cucumber and avocado into thin strips.
3. Assemble the California Roll:
Place a bamboo sushi mat on a flat surface and cover it with plastic wrap.
Place a sheet of nori (shiny side down) on the mat.
Wet your hands and spread a thin layer of sushi rice over the nori.
Sprinkle with sesame seeds and gently flip the nori over so the rice is facing down.
Add crab mixture, cucumber, and avocado in a line near the edge of the nori.
4. Roll the Sushi:
Use the bamboo mat to tightly roll the sushi from the bottom up.
Apply gentle pressure to form a firm roll.
5. Slice & Serve:
Use a sharp knife (wet with water) to slice the roll into 6-8 pieces.
Top with masago (optional) and serve with soy sauce, pickled ginger, and wasabi.
