Ingredients:
2 cups cooked pasta (any type you like: penne, fusilli, etc.)
1 cup cherry tomatoes, halved
1 cup diced cucumber
1/2 cup black olives, sliced (optional)
1 cup cheese cubes (cheddar, mozzarella, or your favorite cheese)
1/4 cup chopped fresh parsley or basil
Salt and pepper to taste
For the dressing:
3 tablespoons olive oil
1 tablespoon lemon juice or vinegar
1 teaspoon mustard (optional)
1/2 teaspoon garlic powder or minced garlic
Instructions:
1. Cook the pasta according to package instructions. Drain and let it cool.
2. In a large bowl, combine the cooked pasta, tomatoes, cucumber, olives, and cheese cubes.
3. In a small bowl, whisk together the olive oil, lemon juice (or vinegar), mustard, garlic, salt, and pepper.
4. Pour the dressing over the pasta salad and toss well to combine.
5. Garnish with fresh parsley or basil.
6. Chill in the fridge for 30 minutes before serving for best flavor.
