4 flour tortillas

Instructions:
1. Prepare the filling:
In a bowl, mix the cooked chicken with cheese, peppers, onions, and seasoning if using.
2. Heat the pan:
Heat a non-stick pan or skillet over medium heat and add a little oil or butter.
3. Assemble the quesadilla:
Place one tortilla in the pan.
Spread a layer of the chicken mixture on half of the tortilla.
Fold the other half of the tortilla over the filling (like a half-moon).
4. Cook the quesadilla:
Cook for 2–3 minutes on each side until the tortilla is golden brown and crispy, and the cheese is melted.
5. Repeat and slice:
Remove from the pan, let it cool slightly, then slice into wedges.
Repeat with the remaining tortillas and filling.
6. Serve:
Serve hot with sour cream, salsa, or guacamole on the side.
