Ingredients:
6 large egg yolks
3/4 cup sugar
1 cup mascarpone cheese (room temperature)
1 1/2 cups heavy cream
2 cups strong brewed coffee (cooled)
2 tablespoons coffee liqueur (optional)
1 teaspoon vanilla extract
2 packages of ladyfingers
Unsweetened cocoa powder (for dusting)
Dark chocolate shavings (optional)
Instructions:
1. Prepare the custard:
In a heatproof bowl, whisk the egg yolks and sugar together until pale and slightly thickened.
Set the bowl over a pot of simmering water (double boiler method) and whisk for about 5-7 minutes until it becomes smooth and slightly thickened.
Remove from heat and let it cool for a few minutes.
2. Add mascarpone:
Add the mascarpone cheese to the egg mixture and mix until smooth.
3. Whip the cream:
In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form.
4. Combine the mixtures:
Gently fold the whipped cream into the mascarpone mixture until fully combined.
5. Assemble the Tiramisu:
In a shallow dish, mix the cooled coffee with the coffee liqueur (if using).
Dip the ladyfingers into the coffee mixture quickly (do not soak them) and layer them at the bottom of a serving dish.
Spread half of the mascarpone mixture over the ladyfingers.
Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
6. Chill:
Cover and refrigerate for at least 4 hours or overnight for the best results.
7. Serve:
Before serving, dust the top with cocoa powder and optionally add some chocolate shavings.
