Ingredients:
2 cups fresh basil leaves, packed
½ cup grated Parmesan cheese
⅓ cup pine nuts (or walnuts)
2 cloves garlic, minced
½ cup extra virgin olive oil
Salt and black pepper (to taste)
1 tbsp lemon juice (optional, for extra freshness)
Instructions:
1. Blend the Ingredients:
In a food processor, combine basil, Parmesan cheese, pine nuts, and garlic.
Pulse until finely chopped.
2. Add Olive Oil:
While the processor is running, slowly drizzle in the olive oil until the sauce becomes smooth.
3. Season and Serve:
Add salt, black pepper, and lemon juice if using.
Blend again and adjust seasoning to taste.
4. Storage:
Use immediately, or store in an airtight container in the fridge for up to a week.
You can also freeze pesto in small portions for later use.
