Ingredients:
2 cups cooked risotto (or short-grain rice)
½ cup grated Parmesan cheese
1 egg, beaten
½ cup mozzarella cheese, diced
½ cup cooked and seasoned ground beef (optional)
1 cup all-purpose flour
2 eggs, beaten (for coating)
1 ½ cups breadcrumbs
Vegetable oil (for frying)
Salt and pepper (to taste)
Instructions:
1. Prepare the Rice Mixture:
In a large bowl, mix the cooked risotto with Parmesan cheese and one beaten egg. Stir well until combined. Let it cool slightly.
2. Form the Arancini Balls:
Take a small amount of rice mixture in your hand, flatten it, and place a cube of mozzarella (and a bit of meat if using) in the center.
Gently shape the rice around the filling to form a ball. Repeat until all rice is used.
3. Coat the Arancini:
Roll each rice ball in flour, then dip it into the beaten eggs, and finally coat it with breadcrumbs. Ensure even coverage.
4. Fry the Arancini:
Heat vegetable oil in a deep pan to 350°F (175°C).
Fry the rice balls in batches until golden brown and crispy (about 3-4 minutes per batch).
Remove and drain on paper towels.
5. Serve:
Serve hot with marinara sauce or your favorite dipping sauce.
